Why German uses H and B
In German, B natural is called H and the name B means B flat. Sharps add -is (Cis, Fis) and flats add -es (Des, Ges), with the short forms Es and As. The same system is used in Austria, Switzerland, much of Scandinavia and Central Europe, which is why a score from Vienna may ask for an H.
Fixed do and movable do
In fixed do, do is always C: this is how notes are named in France, Spain, Italy, Portugal, Brazil and much of Latin America. In movable do, do is the first note of the key you are in, so a melody keeps its syllables in any key. For minor keys there are two schools: la-based minor (the minor scale starts on la) and do-based minor (it starts on do).
Japanese and Korean names
Japanese music lessons use do re mi in katakana (ド レ ミ) and the traditional iroha letters (ハ ニ ホ) for keys, so C major is ハ長調. Korean uses do re mi in hangul (도 레 미) and the letters 다 라 마 for keys, so C major is 다장조. Sharps are 嬰 in Japanese and 올림 in Korean; flats are 変 and 내림.
